Countertop Garden

Before you throw out the bottoms of your scallions or lettuce, STOP! Did you know you can regrow scallions or lettuce? We can use our food scraps to regrow food.

Activity Instructions

for Observers (Pre-K through 2nd Grade) and Explorers (3rd Grade through 5th Grade)

What You’ll Need:

  • Base/stem of lettuce head (about two inches of the base intact)

  • Container

  • Tap water 



  • Cut the lettuce leaves from the lettuce head (ask an adult for help when using a knife), leaving about two inches of the base intact (make sure you eat the lettuce leaves!)

  • Place the stem base in a bowl or jar, with the cut side where you sliced off the leaves facing up.

  • Fill the container about halfway up the base (about 1 inch of water)

  • Place the container with the lettuce base near a sunny window

  • Change the water every other day

  • Watch your lettuce regrow after a few days

  • Use up your regrown leaves

You can also do this with scallions!

Turn It In

Take a picture of your lettuce or of what dish you made with the grown lettuce (or scallions). We hope you whip up something tasty. Upload your pictures to Padlet.
